  • 4 thick boneless pork loin chops
  • 2 tbl fresh tarragon leaves, chopped
  • 1/2 tsp salt
  • 2 tbl olive oil
  • 1 lb asparagus
  • 1 bunch green onions
  • 1/2 cup dry white wine
  • 1 tbl dijon mustard

Step 1

rub pork chops on both sides with tarragon and salt. in 12 in skillet, heat olive oil on med-high heat until hot. cook pork 5 min or until browned on both sides, turning over once; transfer to plate. to same skillet add asparagus, sliced on an angle, and green onions, sliced. cook 3 min, stirring. add wine and simmer 2 min, stir in mustard. nestle pork into asparagus. cook another 2-4 min or until pork is cooked through.
