Chicken Stuffed Mushrooms

Ingredients
- 8 large mushroom caps
- 1/4 cup grated Manchego Cheese
- 8 chopped mushroom stems
- 1 T tomato paste
- 1 # chicken breast
- 2 T parsley, chopped fine
- 6 garlic cloves, finely chopped
- 1/4 cup white onions, finely chopped
- 1 T smoked paprika
- salt and pepper to taste
- 1/8 cup or 2 T breadcrumbs
- 3 T olive oil
- 1 whole & 1 yolk egg

Preparation
Step 1
1. Heat the olive oil in a skillet at medium heat, add the onions and the chopped mushroom stems, sauteed for 3 minutes then add the garlic, cooked for 5 minutes take off heat and put aside.
2.In a large mixing bowl put all ingredients together with the exception of the mushroom caps, mix well, add the sauteed onions, garlic and mushrooms stems and mix again.
3. Fill the mushroom caps with the chicken mixture, place in an oiled sheet pan and place in a preheated oven at 325 degrees for 20 minutes, plate and serve.
