Ingredients
- 1 1/2 cups flour
- 1 1/4 cups corn meal
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2/3 cup sugar
- 1/2 teaspoon salt
- 3 eggs
- 1/2 cup vegetable oil
- 1 1/4 cup buttermilk
- 2 fresh mngoes, peeled and cut into 1 inch chunks
- honey
Preparation
Step 1
Mix dry ingredients together in a bowl and set aside. Beat eggs, oil, buttermilk and mangoes together for two minutes on medium speed. Add dry ingredients slowly, stirring just enough to mix (batter should be slightly lumpy). Pour into lined muffin tins, filling each cup about 2/3 full. Cover each muffin with a thin layer of honey and bake at 325 degrees F. for 25 minutes, turning once during baking if necessary.
