  • 4 fresh grouper filletsped bass or halibut, sea bass, stri
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbl olive oil
  • 4 tbl butter
  • 1 tbl balsamic vinegar
  • 1 tsp minced shallot
  • 1 tsp fresh lemon juice

Step 1

preheat oven to 425. pat fish dry with paper towels, and let stand at room temp 10 min. sprinkle fillets with salt and pepper.
heat oil in a large ovenproof skillet over med-high heat. carefully place fillers, top side down, in hot oil. cook 3-4 min or until edges are lightly browned. transfer skillet to oven.
bake at 425 for 4-5 min or until fish is opaque. remove from oven and place fish, seared side up on a platter.
wipe skillet clean, cook butter in skillet over med heat 2- 21/2 min or until butter begins to turn golden brown. pour butter into small bowl. whisk in vinegar, shallot, and lemon juice. season with salt and pepper.
