Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 cups thinly sliced onion
  • 1 tablespoon sugar
  • 3 cloves garlic, minced
  • 1 tablespoon caraway seeds, toasted and ground
  • 1 1/2 tablespoons sweet paprika
  • 1 teaspoon spicy paprika
  • 2 tablespoons fresh marjoram, minced
  • 1 teaspoon fresh thyme, minced
  • 1 each bay leaf
  • 3 tablespoons tomato paste
  • 2 tablespoons balsamic vinegar
  • 4 cups chicken broth
  • 2 1/2 pounds beef , cut 1" thick
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • prepared noodles

Step 1

1. In a large Dutch oven, heat the olive oil and saute onions and sugar until carmarelized, about 45 minutes.

2. Add the garlic and ground caraway seeds and cook for 1 minute. Add the two paprikas, marjoram, thyme, and bay leaf. Saute another minute until fragrant.
Add the tomato paste. Add vinegar and the broth and cook scraping the bottom of the pan with a wooden spoon for 1 minute. Add the beef, salt, and black
pepper and bring to a boil. Then lower to a simmer and cook uncovered until very tender, about 1 1/2 hours, stirring occasionally.

3. Taste and adjust the seasoning with more salt and pepper. Remove bay leaf and serve over noodles.
