Penne with a Quick Sausage Sauce

Ingredients

  • 2 Tablespoons olive oil
  • 2 small red onions
  • 5 Italian sausages (sweet), skin removed and crumbled
  • 1 1/2 Tablespoon chopped fresh rosemary
  • 2 bay leaves
  • 2 small dried chilies, crumbled (may 1/2 this amount)
  • 1 large can plum tomatoes (with sauce) chopped as cook
  • salt and pepper
  • penne
  • 5 oz whipping cream
  • Parmesan cheese

Preparation

Step 1

In a large saucepan, heat oil and fry onion until light brown. Add crumbled sausage, rosemary, bay leaves and chilies. Fry together over a high heat, stirring to break up sausages. Remove all but 1 Tablespoon of fat and cook for 20 minutes. The sausage should become brown and disintegrate. Add tomatoes and stir and return to a boil. Remove. Cook pasta. Drain. Stir in cream. Add pasta and parmesan cheese. Serve with rest.

Serves 8.
