Coconut Lemon Bars

These lemon bars have a little bit of everything, and then some. Their nilla wafer crust and lemony-cheesecake filling is topped off with coconut, white chocolate chips, and macadamia nuts.

Ingredients
- 6 tablespoons butter, melted
- 2 8-oz packages cream cheese, softened
- 5 tablespoons lemon juice
- 1 tablespoon fresh lemon zest
- 2 eggs
- 2 cups white chocolate chips
- 1 cup sweetened flaked coconut
- 1/2 cup chopped macadamia nuts
Preparation
Step 1
Preheat oven to 350 degrees.
Completely combine vanilla wafers and butter in a small bowl. Press mixture into the bottom of a greased 9x13" pan.
In a medium bowl, beat together cream cheese, lemon juice and eggs until smooth. Pour this mixture over vanilla wafer mixture in the 9x13" pan.
Top the layers in the pan with white chocolate chips, coconut, and macadamia nuts - then press them down firmly in the pan.
Bake for 25-30 minutes or until lightly browned. Cover and refrigerate until ready to serve.
