Ingredients
- 1 tablespoon olive oil
- 2 medium onions, chopped
- 2 cloves garlic, pressed
- 1/2 pound ground turkey
- 1 envelope taco seasoning
- 1 4-oz. can chopped green chilies, drained
- 16 corn tortilas, cut into wedges
- 2 cups shredded Monterey Jack cheese
- 1 16-oz. can refried beans
- 1 7-oz. jar roasted red bell peppers, drained
- Salsa, optional
- Sour cream, optional
Preparation
Step 1
In a skillet, heat olive oil over med.-high heat & cook onions till translucent. Add garlic & cook 1 min. more. Add turkey, & cook until browned, breaking into small pieces as you go. Add the taco seasoning, mixing well & simmer a couple of minutes until slightly thickened. Stir in the chilies and set aside.
Heat oven to 400º F. Lightly grease a 10-inch pie plate. Place 1/4 of tortilla pieces to cover bottom; then spread half turkey & 1 cup of Jack cheese.Place another 1/4 of tortilla pieces on cheese, then spread beans on top.Place yet another 1/4 of tortilla pieces on beans, then top with roasted peppers. Finally, layer remaining tortillas on peppers, then spread rest of turkey mixture; and top with 1 cup of cheese. Cover and bake 30-40 minutes. Let sit for 10 min. before cutting and serving with Salsa & sour cream.
