Toasted Hazelnut Waffles

Makes a spectacular dessert too. With a scoop of praline ice cream or with Praline filling.

Ingredients

  • 3/4 cup untoasted hazelnuts (about 4oz)
  • 1 cup all purpose flour
  • 2 T granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk or plain yogurt
  • 1 large egg
  • 3 T mild olive oil or vegetable oil
  • Oil for cooking

Preparation

Step 1

Heat the oven to 350 degrees. Spread the hazelnuts in a baking pan and bake 8-10 minutes, shaking the pan once or twice, until the nuts smell toasty and turn light brown. Wrap the nuts in a dish towel and rub to loosen the skins. Pick out the nuts; some skins will adhere and it's fine to use those nuts. Chop the nuts fairly fine in a food processor. Add the flour, sugar, baking powder, baking soda and salt to the nuts. Process to blend well.

Add the buttermilk or yogurt, egg and oil; process a few seconds to blend, scraping down the sides once.

Heat the waffle iron on medium. Grease the iron lightly. Pour in the appropriate amount of batter and spread to the edges. Close and cook until the iron will open easily.

Keep the waffles warm in a 200 degree oven directly on the oven rack, uncovered to stay crisp.
