Cube Steak Skillet Stew

Ingredients

  • 3 tablespoons flour
  • Salt and pepper to taste
  • 6 cube steaks
  • 1 tablespoon butter, divided
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic gloves, pressed
  • 1 can beef broth
  • 1/2 teaspoon thyme
  • 1 teaspoon Worcestershire sauce
  • 2 cups frozen peas ( petite pead are best).

Preparation

Step 1

On a dinner plate, combine flour and salt & pepper to taste. Mix well. Dredge meat in flour on both sides.
In a skillet, heat half the butter and half the olive oil together over medium-high heat. Add onion and garlic and sauté till translucent, but not brown. Turn down heat if necessary. Add remaining oil and butter, ten add meat, cooking on both sides till browned.
Stir in broth, using a spatula to scrape up the browned bits from the bottom of the pan. Turn the heat down to a simmer, add thyme and Worcestershire sauce and allow to cook for 15 min. more, stirring occasionally. Add peas, salt & pepper to taste, and serve
