Ingredients
- 1/4 cup olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 large can (28 oz) crushed tomatoes
- 1 tsp basil
- 1/4 - 1/2 tsp red pepper flakes
- 1/4 cup vodka
- 1 cup half and half (you can use fat free)
Preparation
Step 1
In large skillet or sauce pot over medium heat, saute olive oil, onion and garlic until softened but not brown. Add tomatoes and basil. Simmer for 20-25 minutes. While the tomatoes are simmering, soak the pepper flakes in the vodka. After the 20-25 minutes, add vodka and pepper flakes to sauce. Stir in half and half and rewarm sauce and serve. Works best with penne pasta.
