Caribbean Chicken Caesar Salad

Ingredients

  • 1 LB boneless skinless chicken breasts, cut into 1" pieces
  • 1/2 C thawed non-alocholic pina colade mix, divided
  • 1 C tangerine or mandarin orange segments
  • 1 celery rib, chopped
  • 2 TBL crushed pineapple
  • 1 Green onion, chopped
  • 4 pitted ripe olives, sliced
  • 2 TBL plus 2 tsp lemon juice
  • 4 tsp amyo
  • 2 tsp grated parmesan cheese
  • 1-2 garlic cloves, minced
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 4 C torn romaine or iceberg lettuce

Preparation

Step 1

combine chicken & 1/4 C pina colada mix
in lg skillet coated w/ cooking spray, cook & stir chicken mixture over med heat until chicken is no longer pink
remove from heat
set aside

combine tnagerines, celery, pineapple, onion & olives in lg bow.
in sm. bowl, combine lemon juice, mayo, cheese, garlic, S & P and the remaining pina colada mix

add chicken & lettuce to tangerine mixture
drizzle w/ dressing
toss to coat
serve immediately
