Garlic Lovers Pot Roast

Ingredients

  • 3 pounds boneless beef chuck roast
  • 10 cloves garlic, peeled & cut in half
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 tablespoons oil
  • 2/3 cup water

Step 1

MAKE 20 evenly sliced small slits about 1 1/2 inches deep all over the pot roast. Insert the garlic cloves as deep into the meat as possible.

SEASON the roast on all sides with salt and pepper.

HEAT a dutch oven over high heat. Add the oil and the meat when the oil is hot. Sear the meat on all sides until very well browned, about 4-6 minutes per side. Don't be afraid to let the roast get very brown. Carefully add the water and cover the pot.

REDUCE the heat to low or medium low and cook the roast til it is tender, about 3 1/2 hours, turning 2 to 3 times during the entire cooking time. Check occasionally to see if there is a little liquid on the bottom of the pan. If necessary add water.

WHEN the roast is very tender, transfer to a plate and slice and serve with the pan juices.
