Marinated Rolled Rib Roast

Ingredients

  • 1/4 cup wine vinegar
  • 1/4 cup oil
  • 3 tablespoons chopped fresh parsley
  • 1 teaspoon seasoned salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 3 pounds rolled beef rib roast (3-4lbs)

Preparation

Step 1

IN 13x9 or 3 qt baking dish or large plastic bag, combine all marinade ingredients; mix well. Add roast, turn to coat. Cover or seal bag and refrigerate for 8 to 12 hours, turning meat several times.

HEAT oven to 350, drain roast and reserve marinade. Place roast on rack in shallow roasting pan. Insert meat thermometer in thickest part of roast but not in the fat. Roast uncovered at 350 until it reaches 160 which is about 1 1/2 to 2 hours. Baste with marinade every 30 min. Let stand 15 min before slicing.
