Ingredients
- 1 + 1 Tbsp olive oil
- 1/4 yellow onion, minced
- 1 1/2 lb lean ground turkey
- 1 Tbsp + 2 tsp fresh ginger, grated
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 head green leaf lettuce, leaves intact
- 1/2 cup fresh basil, minced
- 1 garlic clove, minced
- 3 cups cooked brown rice
- 1 cup broccoli florets
- 1/2 red pepper, finely diced
- Soy Sauce, optional
Preparation
Step 1
Lettuce Wraps:
1. Set pan to med heat. Saute onion for 3 mins Add turkey, ginger, salt and pepper and brown until no longer pink.
2. Place a lettuce leaf on a plate and add a heaping scoop of turkey mix. Top with basil. Add rice inside or keep as a side dish. Wrap and eat or chop and eat with a fork.
Ginger Rice:
1. Heat oil in large sauce pan over medium heat. Add ginger and garlic and saute 1 min Add rice, broccoli, and bell pepper and stir to combine.
2. Heat for 2-3 mins until warmed through; finish with soy sauce if desired.
