Sun Dried Tomato Linguine

Ingredients
- 1/2 cup sun dried tomato halves, snipped into strips
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 4 ounces pitted kalamata olives, sliced
- 3 tablespoons chopped fresh basil
- 1 teaspoon salt
- 16 ounces dry linguine, cooked and drained
- 16 ounce carton sour cream
- 1/4 cup grated parmesan or romano cheese

Preparation
Step 1
In a small bowl, cover tomatoes with boiling water; set aside for 10 minutes.
Meanwhile, heat oil in large skillet over medium-high heat. Add garlic and cook for 1 minute.
Drain tomatoes and add to skillet along with basil, salt and olives. Stir in sour cream and cook until heated.
Add hot linguine and toss well. Place on serving platter. Sprinkle cheese over top. Serve immediately.
