Ingredients
- SALSA:
- 1/3 cup tequila (can substitute orange juice for tequila)
- 1/3 cup lime juice
- 1 Tbsp sugar
- 1/2 tsp salt
- 2 Tbsp vegetable oil
- 1/2 tsp fresh ground black pepper
- 6 chicken breasts, skinned, boned (about 5oz each)
- 15 oz black beans (drained & rinsed)
- 1 hass avocado (finely chopped)
- 6 radishes (finely chopped)
- 6 scallions (finely chopped)
- 1/4 cup fresh lime juice
- 1/8 cup chopped cilantro
- 1/4 cup vegetable oil
- 2 serrano chiles (minced)
- 1/2 tsp salt (needed)
Preparation
Step 1
Combine tequila, lime juice, sugar, salt, oil and pepper in large bowl. Marinate chicken in mixture for at least 20 minutes or up to 3 hours. Saute or grill chicken breasts on each side over medium high heat until cooked thru and lightly browned. While chicken is cooking, prepare salsa by combining remaining ingredients in bowl. Plate cooked chicken and ladle over chicken. Serve with tortillas and fresh greens.
