Ingredients
- Raspberry and Grand Marnier Sauce:
- 1 cup of sour cream
- 1 cup of heavy whipping cream
- 3/4 cup sugar
- 1 envelope of Knox gelatin
- 1/4 cup water
- 8 oz softened cream cheese
- 1/2 teaspoon vanilla
- 2 half-pints fresh raspberries
- 1 half-pint fresh raspberries
- 1/2 cup sugar
- 1 cup seedless raspberry jam
- 2 tablespoons orange-flavored liqueur (recommended: Grand Marnier)
Preparation
Step 1
Combine sour cream and heavy cream in a medium saucepan. Stir in sugar. Place on low heat. Sprinkle gelatin over the quarter cup of water to soften. Stir the gelatin and water mixture in to the cream mixture and remove from heat. In a separate bowl beat the cream cheese until it's smooth. Then, add in the cream mixture and vanilla and whip with beaters until smooth. Transfer to jello mold and refrigerate.
Raspberry and Grand Marnier Sauce:
Place raspberries, sugar, and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and orange liqueur into the bowl of a food processor fitted with the steel blade and process until smooth. Chill.
To serve, unmold the cream onto a plate, and drizzle Raspberry and Grand Marnier Sauce around the base. Serve with raspberries and extra sauce.
