Ingredients
- 4 medium Yukon Gold Potatoes
- 1 Sprig of Rosemary stripped
- 6 cloves of garlic minced
- 2 Tablespoons minced chives
- 3/4 cup of high quality virgin olive oil
- Kosher salt and ground black pepper
Preparation
Step 1
Heat oven to 325 degrees
Heat grill to high. Slice Yukon Gold Potatoes into 1/4 inch slices. Place on grill and grill about three minutes on each side to mark them. Remove potatoes from the grill and place in single layers on a 15" Jelly Roll pan or a cookie sheet with sides.
Add the olive oil to the potatoes to come up about 1/4 to 1/2 the sides of the potatoes.
Turn the potatoes to coat both sides with the olive oil.
Sprinkle Kosher salt and black pepper on each side of the potatoes.
Strip the Rosemary sprig and finely chop the chives and garlic. Mix together and sprinkle on top of the potatoes. Add more salt and pepper if needed. Place the potatoes into a 325 degree oven and bake in the center for about 20 to 25 minutes or until tender.
