How To Make Fresh Homemade Bagels

I have always loved to make and eat fresh homemade bagels. My husband and I would go to Brackman’s Bagels in Salt Lake City and bring them home for a special family treat. That company sold out to another group and we still visit them, but my husband missed the delicious sunflower seed bagel from Brackman’s.  I was curious where this fun food came from and did a little research.

How To Make Fresh Homemade Bagels:

1/4 cup honey plus 1 tablespoon honey for the boiling water below

4  to  4-1/2  cups freshly ground whole wheat flour or white flour

Put the warm water in the Bosch or in a bowl, start adding all the ingredients and 2 cups flour,

then add

the other 1 1/2 to 2 cups flour. Mix in the Bosch or knead on counter for 5-8 minutes.

Form dough into a ball and place in greased bowl, cover and let rest for 10 minutes.

Divide the dough into 12 balls and pull your fingers through the center of the ball to make a “donut” like shape, or in our case, a bagel.

Place the bagels on a greased pan or parchment paper and let rest 15-20 minutes uncovered.

Start a fry pan about 12 inches by 2- 1/2 inches deep filled with water to a boil. This is the pan I use:

It makes them nice and glossy and, if adding seeds, nuts, or anything else on top, they adhere well after baking. I love adding a bit of cinnamon and raisins to the dough, before resting and shaping, for a wonderful, slightly sweet, bagel. I’ve also added cranberries and other berries, to the dough. The kids like it when I add chocolate chips, too! One of my favorite toppings is homemade crème fraîche with a bit of whatever sweetener is within easy reach (usually honey or maple syrup) and a splash of vanilla.
