CUTLETS****Chicken Parmesan

Ingredients

  • 5 - 6 oz. chicken or turkey scallopini
  • 2 tsp. EVOO
  • 2 tbsp. pizza sauce
  • 30 grams shredded Kraft Light Italiano Four-Cheese Blend
  • Fresh basil leaves

Preparation

Step 1

* Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Salt and pepper chicken and saute quickly until done. Remove to a parchment-lined baking sheet.

* Top each piece of chicken with a tablespoon of pizza sauce and lay fresh basil leaves (and some arugula or spinach if you have it) on my piece. Top with mozzarella and broil until golden.
