Gorgonzola and Pear Pasta

Ingredients

  • 2 T Butter
  • 2 Firm Bose pears, sliced
  • 1 lb rigatoni pasta
  • 8 oz Creamy Gorgonzola
  • 1 T Mascarpone
  • 1/3 cup chopped walnuts, divided

Preparation

Step 1

1. Melt butter in large skillet over low heat. Add pear slices; cook until warmed through. Remove from heat and set aside.

2. Prepare pasta according to package directions. Drain reserving 1/4 cup of pasta water.

3. Meanwhile, cut gorgonzola in small cubes and place in large saucepan. Add reserved pasta water and place over low heat. Cook until cheese melts into sauce.

4. Return pasta to pot and stir in mascarpone to coat. Stir in pears, half the walnuts, and half the gorgonzola sauce. Place pasta mixture in serving bowl ant top with remaining sauce then walnuts. Serve immediately.
