Spicy Shrimp Dip

Ingredients

  • 2 tbsp butter
  • 1/4 onion, chopped
  • 1/4 red pepper, chopped
  • 1 jalapeno, chopped
  • 2 cloves garlic, grated
  • 1 lb shrimp defrosted frozen peeled, deveined, patted dry, coarsley chopped, tails removed
  • 1 tsp worcestershire sauce
  • 1 tsp hot sauce
  • 8 oz cream cheese, room temperature
  • 1/2 c sour cream
  • 1/2 c mayo
  • 1 c mozzarella cheese
  • 1/2 c cheddar cheese
  • old bay, optional

Step 1

Heat in lrg saucepan over med high heat. Melt butter in hot pan, and add onion, bell pepper, jalapeno and garlic. Season with salt and pepper to taste. Saute until slightly tender. Add in the shrimp, worcestershire sauce and hot sauce. Season with salt and pepper and cook until shrimp are pink. Meanwhile in med sized bowl, combine the cream cheese, sour cream, mayo and cheeses. Using slotted spoon to avoid the juices, remove the shrimp mixture out of the pan into the bowl with the cream cheese mixture. If you add in all cooking juices along with the shrimp, your dip may be watery. Stir in the shrimp mixture until combined. Taste, season with salt and pepper to taste. and spoon into baking dish. Bake for about 25-30 mins or until bubbly and slightly brown. Serve with sliced baguette, or tortilla chips or even crackers.
