Ingredients

  • Makes 4 servings
  • Dressing
  • 1/4 cup plain nonfat yogurt
  • 1/4 cup buttermilk
  • 1 tablespoon granulated sugar (or 2 packets of choice of no-calorie sweetener)*
  • 1 teaspoon lemon juice
  • 3/4 teaspoon poppy seeds
  • Dash salt
  • Pepper to taste
  • Salad
  • 6 cups spinach leaves
  • 1 1/2 cups sliced fresh strawberries
  • Subtract 3 grams of carbohydrate and sugar and 12 calories with sweetener.

Makes 4 servings

1.  To make the dressing, in a small bowl, whisk together the yogurt, buttermilk, sugar, lemon juice, poppy seeds, salt, and pepper.

2.  In a large bowl, place the spinach and strawberries. Pour the dressing on top, and toss together lightly. Serve immediately.
