Ingredients
- 3 cups long grain rice
- 1 8 ounce carton sour cream ( I use more)
- 1 teaspoon Poultry seasoning
- 1 (16 ounce) can red beans drained
- 2 cups canned black eyed peas
- 1/2 cup diced hickory smoked sausage
- 1/2 cup ( 2 ounces) shredded Monterrey Jack cheese
Preparation
Step 1
Place rice in lightly greased 2 quart baking dish.
Combine sour cream and poultry seasoning.
Spread over rice
Combine red beans and peas and spoon over sour cream mixture.
Bake 350 degrees for 30 minutes. Sprinkle with saussage and cheese. Bake additional 5 minutes.
