Ingredients

- 3/4 C flour
- 3/4 C milk
- 3 eggs
- pinch of nutmeg
- 8 TBS butter (1/2 stick)
- 2 TBS sugar
- salt
- juice of 1/2 lemon - added at very end
Preparation
Step 1
Preheat oven to 425
Combine flour, milk, eggs, nutmeg.
Beat lightly, leaving batter slightly lumpy.
Melt butter in 12" skillet (preferably cast iron) When butter very hot - pour in batter.
Put pan in oven and bake 15-20 min or until golden brown.
Sprinkle with lemon juice and serve with bacon, sausage and jam.
