Ingredients
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 1/2 cup butter at room temp
- 1 egg
- 1 tsp grated lemon zest
- 1 tsp grated orange zest
- 1/8 tsp each, Wilton Violet, Lemon Yellow, Sky Blue, and Red-Red concentrated food coloring
- 12 (4 1/2" long paper lollipop sticks
- 6 assorted plastic straws-optional
Preparation
Step 1
Combine flour, baking powder adn salt; reserve. On medium-high speed, beat sugar and butter until light and fluffy. Beat in eggs and zests until blended. On mediium-low speed, beat in reserved flour mixture until just combined.
Divide dough into 4 equal pieces. On parchment paper or wax paper, separatley knead one food coloring into each dough piece. Between two pieces of paper, roll each dough piece into 12x18" rectangle.
Remove papers from dough sheets. On single sheet of paper, stack dough sheets in any order.
Starting at short end, using paper to lift edge, tightly roll up dough. Pinch long edge to seal. Wrap in plastic wrap and chill until dough is firm-about 1-2 hours.
Preheat oven to 325 degrees. Lightly coat 2 baking sheets with cooking spray. Unwrap dough, and cut crosswise into 12 (1"wide) slices. Arrange 3" apart on baking sheets. Slightly flatten each dough slice; insert lollipop stick halfway into side of each. Bake 8-10 minutes or until edges are set. Cool completely on baking sheets on racks. If desired, cut straws to same length as lollipop sticks and slip over sticks
