Cookies-Russian Tea Cakes

Cookies with with nuts and covered in powdered sugar

Ingredients

  • 1 cup butter-room temp
  • 2 tsp vanilla
  • 1/2 cup sifted confection sugar, plus more to roll cookies in
  • 2 cups flour
  • 1/4 tsp salt
  • 1 cup fine chopped pecans or walnuts

Preparation

Step 1

Preheat oven to 325 degrees
Cream butter. Add vanilla and then gradually add confection sugar. Beat until light and fluffy. Sift flour-measure again, then sift again with salt. Add pecans and mix well.

Shape dough into 1 inch balls and place on ungreased baking sheet or parchment paper. Flatten slightly. Bake 20 minutes or until edges are very light brown. Remove and roll in powdered sugar while still hot. Cool on wire racks and tehn roll cookies again in pwdered sugar before serving.
