Ingredients
- Streusel Topping:
- 1 tablespoon butter or margarine, softened
- 2 tablespoons sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- Cake:
- 1 3/4 cups all-purpose flour
- 1 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2/3 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 cup fresh or frozen blueberries
- 2 1/2 teaspoons lemon zest
Preparation
Step 1
Preheat over to 375 degree Fahrenheit. For streusel, in a medium sized bowl, mix together butter and sugar until well blended. Add flour and cinnamon; mix until crumbly. Set aside. For cake, in a large bowl, combine flour, sugar, baking powder,and salt. Add milk, oil, and egg, mixing just until dry ingredients are moistened. Gently stir in blueberries and lemon zest. pour batter into a 9" x 9" square oven safe baking dish. Sprinkle evenly with streusel. Bake 30-35 minutes or until wooden pick inserted in center comes out clean.
