Ingredients

  • •2 striploin, sirloin or tenderloin grilling steaks

  • •1 Tbsp. balsamic vinegar

  • •½ c. whipping cream

  • •¼ t. tried basil or 1 Tbsp. chopped fresh basil

  • •½ tsp. garlic, minced

  • •3 Tbsp. goat cheese, crumbled

  • •1 small tomato, seeded and finely chopped

  • •1 small green onion, white part only, finely chopped

  • •1 tsp. chopped fresh parsley

  • •Salt and pepper, to taste

Directions

Preheat BBQ to medium-high. Brush steaks with vinegar; set aside. In small saucepan, bring cream, garlic & basil to boil; reduce heat to low & simmer until volume reduces by half. Add cheese; stir with wooden spoon until completely blended. Remove from heat. Add tomatoes, onion & parsley to sauce. Season with salt & pepper. Season steak and grill to desired doneness. Serve sauce over grilled steak. The sauce can be made ahead, kept covered and refrigerated until ready to use. To reheat, stir over low heat until warmed throughout.
