Festive Potato Medley

This recipe is so pretty. I always make it at Christmas time. Yummy too

Ingredients

  • 1 box (900ml) Campbell's Ready to Use Chicken Broth (Regular or Less Salt)
  • 3 cups Peeled 1" pieces of Yukon Gold potatoes
  • 2 cups peeled 1" pieces of sweet potatoes
  • 2 cups unpeeled 1" pieces of red-skinned potatoes
  • 1/2 cup light sour cream
  • 2 Tbsp butter or margarine
  • Generous dash of black ground pepper

Preparation

Step 1

Heat broth and potatoes to a boil over medium-high heat in 3qt saucepan
Reduce heat to medium. Cover and cook for 10 minutes or until potatoes are tender. Drain, reserving broth
Mash potatoes with 1/4 cup of broth, sour cream, butter and black pepper. Add additional broth, if needed, until desired consistency.
