Turkey Noodle Soup

Ingredients

  • Stock:
  • 1 turkey carcass
  • 10 - 15 cups of water (enough to cover the carcass)
  • 1 bay leaf
  • 1 stalk of celery (including leaves) chopped
  • 1 onion, quartered
  • In stock pot or large saucepan, combine carcass, water, bay leaf, celery and onion. Simmer, covered for 4 hours. Strain, reserving stock. Let bones cool, then pick out any meat and add to stock. (you should have about 6 cups)
  • Soup:
  • 1/3 cup broken noodles (1/2 inch)
  • 2 stalks celery (including leaves)chopped
  • 1 carrot, chopped
  • 3 green onions, sliced
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • dash hot pepper sauce
  • salt and freshly ground pepper

Preparation

Step 1

In stockpot, bring stock to a boil; add noodles. celery, carrot, green onions, basil and thyme; simmer for 10 minutes. Stir in hot pepper sauce; season with salt and pepper to taste.
Serves 8, 3/4 per serving.
