Ingredients
- 2 cans (1 lb, 2 oz each) yams or sweet potatoes, drained
- 1 can ( 8.5 oz) crushed pineapple
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 cup coarsely chopped pecans
- 1/4 cup light brown sugar (packed)
Preparation
Step 1
1.1. Slice yams into 1/2-inch thick pieces. Combine with pineapple, butter, sugar and cinnamon in 2-qt casserole. Microwave at high 4 minutes. Stir.
2.2. Sprinkle top with pecans and brown sugar. Microwave at high 2 to 4 minutes. If dish is not hot and topping not melted after 2 minutes, rotate dish 1/4 turn before continuing to microwave.
3.Makes 6 to 8 servings
4.Note: If desired, yams may be mashed with the first 4 ingredients, then cooked. Finish with brown sugar nut topping and continue to microwave as above.
