Jambalaya (Sue's Honey Island Jambalaya!! )

Ingredients

  • 2 lbs Italian sausage (crumbled-- Saute in large pan.
  • 3 packs frozen chopped seasoning or 3 cups (fresh bellpepper, onion, celery)
  • Brown the above together and skim off any excess grease.
  • Season to taste with garlic powder
  • 2 Tablespoons McGuffy's spice or other
  • full bodied seasoning
  • 4 Tablespoons Worcestershire sauce.
  • Add 1/2 can Ro-Tel Tomatoes
  • Add 4 cans Swanson's chicken broth or stock to cover seasoning and meat mixture.
  • Cover and simmer a few minutes.
  • Add 1 to 3 cups of any meat or shell fish as desired shrimp, crawfish, turkey, chicken, etc.
  • I added 1 lb peeled shrimp and some Polish sausage.
  • Cover and simmer some more!
  • Add 2 to 4 cups of rice (Minute rice )depending on how large your pot is.
  • Cover and cook on "hi" for 15 minutes or so; then turn down and cool, stirring occasionally until tender!
