Tomato, Cucumber, and Corn Salad

Ingredients
- 1/2 red onion, sliced
- 2 ears fresh corn, cooked
- 1 each english cucumber, peeled and sliced
- 2 large tomatoes
- 4 sprigs parsley
- salt and pepper, to taste
- 4 tablespoons olive oil
- 1/2 cup feta cheese, optional
- 1/4 cup kalamata olive, pitted
- 1/4 lemon, juiced

Preparation
Step 1
1. Slice onion and soak in cold water for about 5 to 10 minutes. Drain and pat dry. Cut cooked corn from cob. Halve cucumber, seed and slice thinly. Core tomatoes and halve. Slice each half into 8 slices.
2. Toss onions, corn, cucumber, and tomatoes together. Sprinkle with parsley, salt, and pepper. Drizzle with olive oil and toss to mix. Garnish with cheese and olives if desired. Squeeze lemon juice over salad just before serving.
