Southern Shrimp Salad

  • 2 pounds shrimp, cooked and peeled
  • 1 cup uncooked white rice
  • 1/2 cup onion, chopped
  • 1/2 cup green olives, chopped
  • freshly ground black pepper
  • 1 cup mayonnaise
  • paprika, garnish



Step 1

1. Chop shrimp into bite size chunks. Cook rice until tender, 15-20 minutes. Drain rice and allow to cool.
2. Add onion, olives and pepper to rice and stir in mayo. Add shrimp and blend well. Sprinkle with paprika.
