Ingredients
- 1/2 cup cucumber, cut into 1/2-inch dice
- 1/4 cup red bell pepper cut into 1/2-inch dice
- 8 cherry tomatoes, halved or quartered
- 2 tablespoons red onion or shallot, thinly sliced or minced
- 6 oil cured black or kalamata olives, coarsely chopped or a tablespoon of my homemade tapenade (easier)
- 1/2 cup finely diced cooked chicken or turkey (2 ounces)
- 1 1/2 oz. crumbled or diced light feta cheese
- 1/3 cup homemade Tzatziki sauce
- 1 individual container hummus, divided
- lettuce or greens to line tortilla
- 3 large whole wheat tortillas
Preparation
Step 1
In a bowl, gently toss together the cucumbers, bell pepper, cherry tomatoes, onions, and olives. Stir in the feta and Tzatziki sauce. If needed, add additional mint and dill and a squeeze of lemon juice although you want to keep it as dry as possible so it doesn't soak through the tortilla.
Lay tortilla flat and spread with 1/3 of a small package of hummus then line with a few lettuce leaves, or a handful of arugula. Add 1/3 of the filling to the middle of the tortilla and roll up. Slice in half and serve.
