Ingredients

    lb salmon fillet

    cup panko

  • 1/4

    cup light mayo

    TBS diced shallot

    tBS minced fresh cilantro

    tsp ground cumin

  • 1/4

    tsp salt

  • 1/4

    tsp ground pepper

    TBS canola oil

  • Tartar Sauce

  • 1/2

    cup mayo

  • 1/4

    cup minced fresh cilantro

  • 1

    jalapeno, halved, seeded, deveined and finely diced

  • 1

    hard cooked egg, chopped

  • 1

    clove garlic, minced

  • 1

    tsp Dijon

  • 1

    tsp sweet pickle relish

Directions

1. Remove and discard skin from salmon; cut salmon into 1" pieces. Place salmon in work bowl of food processor fitted with steel knife blade; pulse several times until coarsely chopped. 2. In medium bowl, combine panko, mayo, shallot, cilantro, cumin, S&P until well-mixed. Stir in salmon. Shape into 4-4" patties 3. In large non-stick skillet, heat oil over medium heat. Add patties; cook until browned and cooked through, about 4" per side. Tartar Sauce:\ 1. In small bowl, stir together all ingredients until well-mixed. Cover and chill several hours to develop flavors.
