Ingredients
- 1 - 1 lb salmon fillet
- 3/4 cup panko
- 1/4 cup light mayo
- 3 TBS diced shallot
- 3 tBS minced fresh cilantro
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1 TBS canola oil
- Buns
- Lettuce
- Tomato
- Tartar Sauce
- 1/2 cup mayo
- 1/4 cup minced fresh cilantro
- 1 jalapeno, halved, seeded, deveined and finely diced
- 1 hard cooked egg, chopped
- 1 clove garlic, minced
- 1 tsp Dijon
- 1 tsp sweet pickle relish

Step 1
1. Remove and discard skin from salmon; cut salmon into 1" pieces. Place salmon in work bowl of food processor fitted with steel knife blade; pulse several times until coarsely chopped.
2. In medium bowl, combine panko, mayo, shallot, cilantro, cumin, S&P until well-mixed. Stir in salmon. Shape into 4-4" patties
3. In large non-stick skillet, heat oil over medium heat. Add patties; cook until browned and cooked through, about 4" per side.
Tartar Sauce:\
1. In small bowl, stir together all ingredients until well-mixed. Cover and chill several hours to develop flavors.
