AVOCADO****Avocado Wrap with Spinach/Arugula Blend and Hummus

12/05/15-This is good, in the absence of anything more interesting, but it's pretty boring. Needs something to liven it up, although I'm not sure what ... maybe some chicken/turkey slices or strips would work (leftover Swordfish or Mahi Mahi)?

Ingredients

  • 1 large whole wheat wrap
  • 1/2 small package hummus from Costco
  • 1/2 cup spinach/arugula blend
  • 1 ounce avocado (about 1/4 medium to small/1/5 large) sliced if firm, smashed if softer
  • Aleppo pepper to taste
  • salt and ground pepper to taste

Preparation

Step 1

Spread wrap with hummus and lay greens over all. Lay avocado in a row at the bottom of the wrap, sprinkle all with salt and pepper to taste, roll up and cut in half.
