Scalloped Chesse Potatoes

Ingredients
- 3/4 cup Assiago Cheese
- 3/4 cup Parmesan Cheese
- 3/4 cup Romano Cheese
- 4 lbs Potates - Peeled and sliced into 1/4 inch rounds
- 3/4 tsp pepper
- 3/4 cup finely chopped onions
- 3 tbls flour
- 4 tbls butter
- 3 cups milk

Preparation
Step 1
Preheat oven to 400
Lightly butter glass baking dish 13x9x2
Mix cheeses
Bring milk to simmer
Arrange potatoes on glass dish overlapping slightly
Sprinkle with 1/4 tsp pepper
Sprinkle onion
Sprinkle 3 tbls flour
Dot with 2 tbls butter
Sprinkle half cheese mixture
Top with remaining potatoes
Sprinkle 1/4 tsp pepper
Dot with 2 tbls butter
Cover potatoes with milk, will not cover all potatoes
Reserve remaining cheese
Cover with tin foil and bake 45 minutes
Uncover and sprinkle remaining cheese
Bake until potatoes are tender and cheese is golden brown.
Can be prepared 2 hrs in advance. Let stand at room temperature. Cover and rewarm in 375 degree oven for 20 minutes
