Spaghetti Carbonara

Ingredients

  • 1 lb. spaghetti
  • ¼ lb, pancetta, chopped
  • 2 egg yolks only, beaten (1 egg yolk for 2 people)
  • ¼ stick of unsalted butter
  • pepper to taste
  • parmigano or pecorino cheese

Preparation

Step 1

Start boiling water for spaghetti.

While water is boiling, in a hot frying pan add pancetta and sauté until cooked, and then add a little bit of the hot pasta water (about 2 ladles) to the frying pan.

Pour water out of pasta pot, but leave a little bit of water on bottom of pot. Pour pancetta from frying pan into pasta and add butter and cheese. Stir. Then add egg yolks and toss good to cook the eggs. Add the pecorino and the pepper.
