Reuben Bake

Ingredients

  • 1 1/2 pounds Deli Corned beef, shaved
  • 8 slices Rye or Pumpernickel bread
  • 1 Dijon or other prepared mustard
  • 1/2 pound swiss cheese, shredded
  • 2 pounds sauerkraut, drained and rinsed
  • 2 cups milk
  • 1/2 cup sweet white wine
  • 6 large egg
  • 1 teaspoon salt
  • 1 fresh ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon onion flakes
  • 2 shakes ground nutmeg
  • cayenne pepper

Preparation

Step 1

1. Grease 9x13x3 pan. spread bread slices lightly with mustard. halve slices and line bottom of dish in single layer.
2. Sprinkle 1/2 cheese over bread. sprinkle corned beef over cheese. sprinkle all kraut over corned beef. sprinkle remaining cheese.
3. Whisk together milk, wine, eggs, salt, pepper, garlic powder, onion flakes, nutmeg until well mixed. Pour evenly over all. Sprinkle with cayenne pepper. Cover and refrigerate overnight.
4. To bake place in preheated 325 degree oven uncovered for about 1 hour or until set. If top begins to brown too much cover loosely with foil. Allow to stand for 8 to 10 minutes before cutting.
5. Serve with French or 1000 Island dressing.
