Ingredients
- 2 cups flour
- 2 tsps baking powder
- 2 tsps ground cinnamon
- 1 tsp baking soda
- 4 eggs
- 1 16-oz can pumpkin
- 1-2/3 cups sugar
- 1 cup cooking oil
- 1 cup chopped pecans
- 1 recipe Cream Cheese Frosting (see directions)
Preparation
Step 1
Combine flour, baking powder, cinnamon, soda and 1 tsp salt. Set aside.
In a mixer bowl beat together eggs, pumpkin, sugar and oil. Add flour mixture; beat well.
Stir in pecans. Spread in ungreased 15 x 10 x 1-inch baking pan.
Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
cool on wire rack. Frost with Cream Cheese frosting. Sprinkle with additional chopped pecans. Cut into squares.
CREAM CHEESE FROSTING: In a bowl bet together 1 softened 3-ounce package cream cheese, 1/4 cup butter, and 1 tsp vanilla until fluffy. Gradually add 2 cups sifted powdered sugar, beating until smooth.
