Ingredients
- 16 ounce package smoked sausage (I used smoked Polish Sausage) cut into 1/ 2 inch pieces.
- 1 medium onion (sliced lengthwise)
- 1 cup shredded carrots
- 1 can unsweetened pineapple chunks (undrained)
- 1 tablespoon cornstarch
- 1 teaspoon ground ginger
- 6 tablespoons water
- 2 tablespoons reduced sodium soy sauce
- Cooked white rice
Preparation
Step 1
1. Brown sausage in a nonstick wok, or large frying pan.
2. Add the onion, carrots, and stir fry until crisp tender. Then
drain the pineapple reserving the juice; add the pineapple to
the sausage mixture.
3. In a bowl combine the water,ginger,pineapple juice,soy sauce
and mix until smooth. Add the mixture to the skillet or wok,
bring to a boil, and cook until thickened.
4. Serve over hot rice
