Parmesan & Garlic Kale Chips

Ingredients

  • GARLIC OIL:
  • 1 lb. kale, washed & thoroughly dried
  • 2 T garlic olive oil (recipe below)
  • Pinch of salt
  • 2 T finely grated Parmesan cheese
  • 1 C olive oil
  • 6-10 smashed garlic cloves

Preparation

Step 1

Prepare garlic oil by combining olive oil & smashed cloves in small pan. Place over very low heat & gently cook for @ 20 min. Remove pan from heat & let oil sit for at least 10 min. (up to 2 hrs)

Heat oven 350
Remove stems from kale & break into 2-3" pieces. Place kale in bowl & drizzle with garlic oil. Sprinkle with salt & stir gently until well coated. Transfer kale to baking sheet & spread in single layer.

Bake for @ 10-15 min. or until crispy, but still green in color. Sprinkle with Parmesan over top. Cool & serve
