These are great for appetizers and are like egg rolls without the wrapper.

Ingredients

  • 8 oz raw shrimp, peeled
  • 1/2 the green part of a scallion
  • 1/8 stalk celery
  • 1/8 teas dry mustard
  • 3/4 teas lemon juice
  • 3 T Panko bread crumbs
  • 1 egg white
  • salt and pepper to taste
  • Pinch of Old Bay seasoning
  • Dip in sweet and sour sauce or make a sauce of 1/2 c light mayo, 2 T chopped cilantro and 1 T lime juice.

Preparation

Step 1

Preheat oven to 350.
Spray 12 mini muffin cups with Pam.
Place all the ingredients in a food processor and pulse until the vegetables are completely chopped and everything is mixed or finely chop the shrimp, scallion and celery and mix with the other ingredients.
Fill each cup full and bake for 9-12 minutes, until the cakes are set and the shrimp cooked through.
