Ingredients
- 1 1/2 tablespoons red wine vinegar
- 1 teaspoon lemon juice, fresh
- 2 teaspoons fresh oregano, minced
- 1/2 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 1 clove garlic, pressed
- 6 tablespoons olive oil
- 1/2 medium red onion, sliced thin
- 2 medium cucumbers, peeled and halved
- 6 large tomatoes, cored
- 1/4 cup fresh parsley, torn
- 1/4 cup fresh mint leaves, torn
- 6 ounces roasted red peppers, cut into strips (1/2" x 2")
- 20 large kalamata olive, pitted and quartered
- 1 cup feta cheese, crumbled
Preparation
Step 1
1. Whisk first 7 ingredients together in large bowl.
2. Add sliced onion and cucumber (seeded and sliced into 1/8 inch thick slices). Toss and let stand for about 20 minutes.
3. Cut cored tomatoes into 12 wedges and seeded.
4. Add tomatoes, parsley, mint, olives, and red peppers to bowl. Toss to coat.
5. Top with crumbled feta and serve.
