Ancho-Chile Glazed Halibut

  • 1 1/2 lb. halibut fillets
  • 1/3 cup bottled key lime juice
  • 1/4 cup lemon olive oil (O Olive Oil)
  • 2 Tbsp. frozen orange juice concentrate, thawed
  • 1 Tbsp. sugar
  • 1 tea. ancho chile powder
  • cooking spray

Preparation

Step 1

Preheat broiler. Rinse halibut with cold water; pat dry with paper towels.

For marinade, in a large ziplock bag, combine key lime juice, olive oil, oj concentrate, sugar, and ancho chile powder. Place halibut in ziplock. Squeeze air from bag and seal. Gently massage bag to coat fish, marinate for 10 minutes.

Lightly coat a baking sheet or broiler pan with cooking spray. Remove halibut from marinade and place on prepared baking sheet or broiler pan. Discard marinade. Broil halibut 4-6" from heat for 5-6 minutes or until fish flakes easily when tested with a fork.
