Pork Chops with Sauteed Apples and Sauerkraut

Ingredients
- 4 1/4 lbs center-cut pork chops
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons safflower oil
- 3 golden delicious apples, peeled, cored and cut into 1/4 slices
- 1/4 teaspoon cinnamon
- 1 cup bagged sauerkraut, well drained
- 1/2 teaspoon caraway seed

Step 1
1 Sprinkle pork chops with 1/4 tsp salt and 1/8 tsp pepper.
2 Heat 1 teaspoon of oil in a large nonstick skillet over medium high heat.
3 Add pork and cook until browned and cooked through, 3-4 minutes on each side.
4 Transfer to a plate and keep warm.
5 Heat remaining oil in skillet.
6 Add apples and cinnamon.
7 Cook, stirring occasionally, until apples begin to brown, 3-4 minutes. Add sauerkraut, caraway seeds and remaining salt and pepper. Cook 2-3 minutes.
