PANKO-CRUSTED SALMON CROQUETTES

This recipe is a great way to use up leftover mashed potatoes. If you don't have any, just microwave 1 large or 2 medium baking potatoes, then mash them (skin and all) with some butter. Resist the temptation to add salt while preparing these croquettes; the ingredients have enough.

  • 1 can (14.75 oz) salmon, picked over to remove any bones
  • 1 package (4 oz) smoked salmon
  • 1 cup mashed potatoes
  • 1/2 cup peas (thawed if frozen)
  • Zest of 1 lemon
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. hot sauce
  • 1/4 tsp. ground black pepper
  • 3 Tbsp. chopped fresh flat-leaf parsley
  • 1 cup panko gbread crumbs
  • Serve with tartar sauce

Preparation

Step 1

Flake both salmons into a large bowl. Add the mashed potatoes, peas, lemon zest, mustard, hot sauce, pepper and parsley. mix well, then use your hands to form into 8 patties.

Spread the bread crumbs on a plate. Set each patty into the crumbs, turning to coat both sides.

Coat a medium skillet with cooking spray and set it over medium heat. Add the patties, 2 or 3 at a time, and cook for 4 minutes per side, or until they are browned. Serve with tartar sauce.

TIP: Smoked trout, finely diced cooked shrimp or chopped crabmeat could be substituted for the salmon.
